Upon heating, mucilage is naturally released from the herb and can coagulate to form little floaters as the drink cools down again.
Nutra Organics recommend warming your milk rather than heating it to boiling point and consume as soon as it reaches a suitable temperature. The remnants are likely to settle at the bottom of your cup, so once mixed in, avoiding further stirring.

As carrots are a natural product, as with any other fruit or vegetable, seasonal variances may result in more or less purple pigment.
The exact colour of the latté will also vary slightly depending on the type of milk used.
